Corn Peach Salad

Hello everyone and happy Monday!  Did you have a wonderful weekend?  Ours went pretty well.  Friday night my husband and I took a night to ourselves… it was divine:-) I spread out a blanket on the floor and placed all our food, plates, ect on it.  Picnic inside!  I think it is really fun to picnic every once in a while (or do something different besides sit at the table), but once it gets cold outside… my inclination to be outside plummets and indoor activities are suddenly very appealing.

Part of our picnic extraordinaire was this delicious corn peach salad.  The thought of combining corn and peaches together has been in my head for a while.  I couldn’t seem to shake the idea and decided it was time to try it out.

At first I couldn’t determine if this should be a salad or a salsa.  In the end we classified it as a salad… that could very easily be turned into salsa.  Add a little more tomatoes, citrus and some vinegar (and maybe some onion) and you would have yourself some corn peach salsa!  However for this salad we kept it pretty simple: corn, peaches, tomatoes, cilantro, lime juice and salt.

If you want to double or triple this salad, to feed a larger group, I would start with the same amount of lime juice and then slowly add some more in (the same goes for the salt).  Everybody has a different salt and citrus tolerance so better safe than sorry:-)

Corn Peach Salad (serves2-3)

2 C corn

2 peaches, diced

2 tomatoes, diced

1-2 handfuls of cilantro

Scant 1/8 C lime juice

1/2 t salt

  1. Add corn peaches and tomatoes to a dish.
  2. Finely chop cilantro and mix with other ingredients.
  3. SLOWLY pour the lime juice over your salad a little at a time.  It might not take the entire 1/8 C, depending on your taste.  Add salt to taste.

I wouldn’t recommend this for your main entrée… you would still be hungry.  It is a great side dish though, adding a splash of color and fun flavor to your meal:-)
