It is the beginning of a new week and what a week it will be! Tuesday through Thursday I will have some recipes that will help prepare for the big feast… but for today we have one of our last pumpkin recipes of the month. After that we will take a break from pumpkin, at least for a little bit:-)It was brought to my attention that starting with a picture of raw chicken does not draw a reader in. So I am starting with a picture of the finished product and then going back to pictures in chronological order of how to make the recipe:-) Enjoy!So today’s post is one that I have been thinking about for a while, but I finally got around to making it over the weekend — savory pumpkin chicken. There are so many sweet pumpkin treats that I love finding a balance with some savory dishes. This chicken can easily go with many meals and is quite easy to make. It only takes about 15 minutes (easy, right?). You place the chicken in a pan with pumpkin, broth and some spices. Please be very careful with the spices and the salt. It is easy to over season the chicken and make the flavor overbearing. I wouldn’t add any salt at all until the chicken has finished cooking and you can properly taste it. If it does need some salt, add a little at a time. If the flavor does end up too strong I recommend adding a little bit of agave or honey. It will help bring balance to the seasoning.
Savory Pumpkin Chicken
2 chicken breasts or thighs
½ C pumpkin
¼ C broth
¼ t pepper
½ t chili powder
¼ t ginger
¼ t coriander
Salt to taste
1 squirt agave/honey (optional)
- Thaw chicken, if needed. Place chicken, pumpkin, broth and spices/seasoning into a pan and turn the heat to medium high until it starts bubbling. Reduce heat to medium or medium low and simmer until chicken is cooked through.
- If the spices end up too strong, add a squirt of agave or honey to calm them back down:-)
I made this for my husband and myself over the weekend. He ate his over rice with roasted broccoli and I substituted the rice for zucchini noodles (who wouldn’t?). There are tons of combinations you could throw together with this one. Have fun!
