Chocolate Peppermint Cream Pie

This time of year we are all busy baking, cooking and preparing for holiday festivities with family and friends.  It is my goal to provide a few healthier treats this season.  We have already had the hot chocolate and the gingerbread in a bowl.  Today we have this amazing chocolate peppermint cream pie! (I told you it would be worth coming back for:-)DSC_0881We are actually combing two prior recipes and then making a few changes so this should all seem fairly familiar for those who have been around for a while.  The crust comes from our raw pumpkin pie recipe.  Once again we are using nuts and dates to form our base.  Place all crust ingredients into a food processor and blend until the mixture has transformed from powder to large chunks sticking together.  Take that mixture and place it into a pie pan, push down on the crust until it has formed against the base and sides of the pan. DSC_0917DSC_0935The pie filling was inspired by the paleo chocolate mousse we had a while back.  Both these recipes use avocados and bananas to form a smooth and creamy substance.  Then we flavor it with some chocolate, agave, milk and a few other fun things.  In today’s recipe our fun ingredient is peppermint extract.  We used this in our hot chocolate and once again I would caution you to be careful as you measure it.  It is easy to pour too much too quickly. DSC_0511DSC_0523Once you have the filling made, pour it into your crust and store pie in the fridge to set up/chill.  The best part about the recipe is, followed closely by how amazing it tastes, knowing that you are using natural ingredients.  Getting both of those in the same dessert… does it really get any better?DSC_0546

Pecan Almond Cashew Crust

1 C pecans

½ C almonds

½ C cashews

1 C pitted dates

¼ t salt

  1. Place all ingredients into food processor and blend for several minutes.  It will first turn into a powder/flour consistency and then it will slowly start to stick together.  When most of your mixture is in big chunks, remove mixture place in pie pan.
  2. Using your hands, push down on the crust and spread it out evenly until it has filled the base and sides of the pie pan.

Peppermint Chocolate Cream Pie

2 ripe avocados

2 ripe bananas

¼ t salt

¼ t cinnamon

2 t vanilla

½ t peppermint extract

¼ C + 1 T cocoa powder

¼ C coconut milk

¼ C almond milk

3-4 T agave

  1. Place all ingredients into food processor and blend until all ingredients have mixed together smoothly.  You don’t want there to be any chunks remaining from the bananas or avocadoes.
  2. Pour chocolate mixture into crust and set aside to cool in the fridge.

*If you accidentally use too much peppermint, you can counter it with vanilla, cocoa, milk and/or agave.DSC_1149DSC_1125DSC_1158
