Pumpkin Spice Pecan Oatmeal

We have made it to the last day of our pumpkin theme week.  Rest assured, I will continue to scatter more pumpkin wonder in the weeks to come.  I hope you have enjoyed this week as much as I have.  I have to give a huge thank you to my amazing husband for all his support… and patience as I developed this recipe.  He was my willing guinea pig many times as I perfected the ratios. DSC_0843So this recipe, like a few others, has a story attached with it.  Last fall I was eating some pumpkin butter (yum!) and I thought pumpkin butter oatmeal would be one of the most amazing oatmeals to grace the planet.  I looked at the ingredients in pumpkin butter and did my best to mimic them in my oatmeal.  The common spices are nutmeg, ground cloves, cinnamon and ginger (and lemon juice).  Well I quickly found out that getting the spice ratio right was going to be harder than I anticipated. DSC_0853My first two attempts were so strong the oatmeal wasn’t even enjoyable.  I made several more attempts and eventually got discouraged and left it alone.  Our story picks up about a month ago when my desire for pumpkin butter/spice oatmeal was renewed.  My attempts went better this time.  (I have become a little more adept with spice usage.)  This is where my dear husband comes into play.  Many mornings I offered to make him pumpkin oatmeal in order to nail this recipe.  We were able to improve the recipe with each attempt, but the spice flavor was still too strong.DSC_0878I finally decided to stop being so stubborn.  I wanted to use the individual spices to get the right blend, but it would take such small amounts of some spices that it would be hard to write up an actual recipe.  The recipe would be comprised of mostly pinches and dashes for the measurements.  So I finally decided to simply use pumpkin pie spice.  The spice blend is almost the same (allspice instead of ground cloves) and the ratios would no longer be a problem.  Once I let go of my pride this recipe was a piece of cake.  A few words of wisdom if any of you pick up my pumpkin butter oatmeal crusade (without flavoring it with actual pumpkin butter because that would be too easy).  Go extremely easy on the cloves and make sure you don’t over do the nutmeg as well.  Happy oatmealing! Pumpkin Spice Pecan Oatmeal

1 C oats

2 T protein powder

1 pinch of salt

½ t pumpkin pie spice

½ t cinnamon

1 C almond milk

½ C pureed pumpkin

1 t vanilla

2 t lemon juice

Agave to taste

Pecans for garnish

  1. Put dry oats, salt, protein powder, cinnamon and pumpkin pie spice into a bowl or pot and mix together.  Add milk, pumpkin, vanilla, lemon juice and agave to your oats.
  2. If you are cooking your oats on the stove turn the heat on medium high and stir occasionally until the oats are ready.
  3. If you are using the microwave cook it for a minute, stir and cook it for another minute.  If it needs more time cook it in small increments.
  4. Garnish the oatmeal with pecans.

* I added a little more milk to my oats after they were cooked because I wanted it to be a little creamier.  Adjust milk level to your liking:-) DSC_0906DSC_0918DSC_0908
