Meat Mushroom and Spinach Quiche

We’ve made it to another Friday.  Some weeks that seems like a major accomplishment:-) How was your Halloween?  What was the best costume you saw?  I loved getting pictures of my sweet nieces and nephews in their outfits.  They were all adorable and it was even better than the dream I had the other night.  I was able to take my friend’s little boy trick or treating to the local stores during the day.  It was fun seeing how excited all the little ones were.  I will be honest; Halloween has never been a very big holiday in my book.  However seeing it through the eyes of little munchkins is pretty exciting (minus the inevitable sugar craze that follows).DSC_0512We had a breakfast for dinner night with some friends and then watched the Scarlet Pimpernel.  It might not seem like an appropriate Halloween movie, but we thought it was great:-)DSC_0516Our dinner last night featured this beautiful savory quiche.  If it weren’t for being full (and wanting to share with the others) I would have eaten a lot more of this last night.  I guess I’ll just have to make it again:-)  DSC_0524Ever since I was a kid I have loved meat and mushrooms combinations.  Even though I have admitted to not being an extreme pizza lover, when I did eat pizza my favorite kind was sausage and mushroom.  While I don’t remember the last time I actually had a slice of sausage and mushroom pizza, the general flavor craving has not gone away in adulthood.  Once I thought of making this quiche combing those two I couldn’t get the idea out of my head.  It was everything I imagined it would be.DSC_0529

Meat Mushroom Spinach Quiche

6 eggs

1 C almond milk

¼ C olive oil

½ onion, diced

4 oz mushrooms, sliced

1 lb ground meet

Handful of spinach, chopped

2 tomatoes, diced

½ t salt

½ pepper

½ t lemon pepper

¼ t chili powder

Dash cayenne pepper

  1. Heat oven to 350 F.  Sauté onions, mushrooms, ground meat and spinach.  Season with salt and pepper.
  2. Beat eggs, almond milk and oil in a medium sized bowl.  Add in the sautéed ingredients, tomatoes, salt, pepper, lemon pepper, chili powder and cayenne pepper.
  3. Pour mixture into a lightly oiled pan (I used a pie pan).  Bake in the oven for 20-25 minutes.  Spread spinach over the top and bake for another 15-20 minutes or until egg is cooked all the way through.

* If you bake it in a larger pan, lowering the height of the quiche, remember to adjust the cooking time.DSC_0541DSC_0535DSC_0543
